About the Journal

Modern Journal of Food Science and technology publishes high-quality papers reporting fundamental and significant applied food research in food science and technology including but not limited to biotechnology, biochemistry, processing and utili¬zation of food products and composition. Papers advancing including proposed ideas and research in relation to humans, pets and animal health nutrition, methodology development and analysis, instrumentation and food safety are welcome.

Instructions for Authors

Author Guidelines for the Modern Journal of Food Science and Technology (MJFST)

About the Journal:

  • The Modern Journal of Food Science and Technology (MJFST) is an international, double-blind peer-reviewed scholarly journal published in English and Arabic.
  • It aims to enhance research and knowledge in Food Science and Technology.
  • Submitted articles must be original and contribute to knowledge advancement.

 

Article Types:

  • Full Research Articles:
    • Should provide new knowledge and focus on current and emerging issues.
    • Includes methodologies, research practical applications, and implications.
    • Maximum length: 15 printed pages.
    • Structure: Title page, Abstract, Introduction, Objectives, Materials & Methods, Results & Discussion, Conclusions, Acknowledgments, Conflicts of Interest, and References.
  • Research Notes:
    • Brief communications on complete short investigations, new models or hypotheses or innovative techniques.
    • Length: 4 to 8 pages (max 2500 words).
  • Review Articles:
    • Critical syntheses of literature on current topics.
    • Length: 5 to 10 printed pages.
    • Written by experts or invited contributors.
    • Subjected to the same peer-review process as research articles.

 

Manuscript Peer Review Process:

  • Manuscripts must conform to the journal’s format before submission as in the template.
  • Subjected to blind peer review and editing for quality and originality.
  • The acceptance criteria are the quality and originality of the research and its significance to the readership’s wide interests.
  • The Editor-in-Chief may return manuscripts that fail to meet the submission requirements and formatting guidelines before the review process.
  • Possible decisions:
    • Accept
    • Accept minor changes
    • Resubmit with significant changes
    • Reject
  • Reviewers evaluate the manuscript’s content and ensure readability.
  • Authors must address reviewer feedback objectively.
  • The Editorial Board reserves the right to reject or modify manuscripts.

 

Submission Guidelines:

  • Manuscripts should be in Microsoft Word format, max 30 pages (7,500 words).
  • Formatting:
    • Double-spaced (except between paragraphs and tables).
    • Font: Times New Roman, size 12 or 13.
    • Margins: 2.5 cm (1 inch) on all sides.
    • All major headings should be in Bold with first letter caps only for each word.
    • Indent the first lines of paragraphs.
    • All paragraphs should be left-adjusted.
    • Number pages (after the title page, at top right-hand corner) and use the contentious line numbers.
    • Avoid excessive numerical or bulleted lists.
    • No footnotes or endnotes.
    • Must be submitted electronically, through the journal’s e-mail.
  • Tables & Figures:
    • Use the table feature; do not use spaces/tabs.
    • Include tables and figures immediately after the paragraph where they are first mentioned.
    • Tables should be self-contained and complement, but not duplicate, the information contained in the text or in a figure.
    • Number consecutively in Arabic numerals.
    • Column headings for tables should be brief, with metric units of measurement in parentheses.
    • All abbreviations should be defined in the footnotes of the table.
    • Provide self-explanatory legends and captions.
    • Figures and other graphic materials should be submitted electronically as separate files in common formats. All graphics must be high-resolution.

 

Manuscript Structure (should be presented in the following order):

  1. Cover Letter & Copyright:
    • Declare originality and absence of prior full/partial publication (has not been published fully or partially or under consideration for publication by another journal).
    • Disclose financial support or conflicts of interest.
    • Copyrighted data may not be submitted to MJFST.
    • Previous publication of part of the data in conference proceedings must be cited in the manuscript.
  2. Title Page Includes:
    • Manuscript title (bold, first letters of major words capitalized, max 80 characters).
    • Authors’ full names, affiliations, and contact details (complete mailing addresses, telephone and fax numbers, and e-mails).
  3. Abstract:
    • Max 250 words in English and Arabic (with identical information) on separate sheets.
    • A single paragraph summarizing objectives, methods, findings and conclusions.
    • 6–10 keywords (not duplicating title words) and should not duplicate the title words.
  4. Introduction:
    • Sufficient background, objectives, and relevant literature review.
    • Theoretical framework for the research.
    • The aim and the specific objectives of the manuscript should be clearly stated.
  5. Materials and Methods:
    • Concise but detailed methodology.
    • Experimental design, data collection, sampling, and statistical analysis.
    • Provide sufficient detail for others to verify the work or to allow the work to be repeated by others.
    • Ethical compliance statements for human/animal studies.
    • References for established methods and statistical procedures should be cited.
  6. Results and Discussion:
    • Proper format and logical sequence in the text in presenting the results with appropriate tables/figures.
    • Interpretation, relation to hypotheses, and comparison with literature.
    • Avoid repetitive presentation of the same data in different forms.
    • Levels of statistical significance should be indicated.
    • The discussion includes the author’s interpretation of the results, consideration of any hypotheses advanced in the introduction, and placing the study in the context of other works.
  7. Conclusions:
    • It must be supported by the study’s results.
    • Includes practical application of specific research and appropriate technologies, having local or general implications.
    • Summary of findings, implications, and reasonable recommendations for future research.
  8. Acknowledgments:
    • Sources of funding and technical support.
  9. Conflicts of Interest:
    • Declaration of any conflict or none.

  • In-text citation examples:
    • One author: (Author, 2021)
    • Two authors: (Author & Author, 2021)
    • Three or more: (Author et al., 2021).
    • If two or more in-text references are cited for the same author, they should be arranged in the order of year of publication, from the oldest to the newest. Example: (Author, 2015; Author, 2018; Author, 2020; Author, 2022).
    • If an author or reference is quoted or mentioned at the beginning of a paragraph or sentence or an author has an innovative idea or finding, use Author (2021), Author & Author (2021), or Author et al. (2021).
    • Multiple publications by the same author(s) in the same year should be designated by the letters a, b, etc. Example: (Author, 2021a), (Author, 2021b).
  • Reference List Formatting:
    • List references alphabetically by the first author’s last name.
    • Should include the four elements of the author, date, title, and source.
  • An author may be an individual, multiple people, a group (institution, government agency, organization, etc.), or a combination of people and groups.
  • Use appropriate formats for journal articles, books, conference papers, etc.
  • Provide DOIs or URLs when available.
  • For unpublished, informally published, or in-progress works, include the year the work was produced. Do not use terms like “in progress” or “submitted for publication” in the date section of the reference.
  • If a work has been accepted for publication but is not yet published, use the term “in press” instead of a year: (in press).
